Boxty? I never knew...

I never heard about boxties (sp?) before yesterday afternoon when the local new ran a cooking segment with a chef from one of the local Irish eateries.

Amazing...Irish crepes...only potato flavored! The fella then proceded to make a reduction of cream and wine and toss in green peas, mushrooms, chicken and fresh spinach and cooking it down till the spinach wilted and served it on the boxty. I'm fer sure doing this one next week.

Much the opposite of comedian Dennis Leary's definition of Irish cuisine: you boil it until you can suck it up with a soda straw.

The cooking segment was on WGN TV yesterday. You can still view it on their webpage in the noon news lunch break segment. I don't know how long they keep these segments on the site, so I don't want to post a link that'll be dead in a few days.

The chef mentions that boxties have been neglected because they have been considered "peasant food". Ha-ha-ha...NOT!

If you are ever in Raleigh, NC go to Tir Na Nog, they have great Boxty's and all sorts of other great Irish fare. My wife and I go there for lunch or dinner at least once a month.

I have my Irish Grandmother's recipe for stewed potatos. You could almost eat it with a straw. :mrgreen:

There is a pub in Long Beach, CA that I go to when I am in LA - The Auld Dubliner. Great place. They serve boxties there - many varieties. I have loved them all. I think my favorite though, is the rasher and cheese boxtie - thick bacon and chedder inside, with hot mustard to go on top. Include a few Smithwick's, and you have a feast!
