    Scotch pie

    Just sitting here enjoying a scotch pie from my local pie maker...and was wondering what they call them in Scotland, and how do most people eat them: cold or reheated? Cold on the run makes for a quick and easy lunch. A few minutes in the oven makes then warm and toasty, but never! put them in a microwave unless you like wet chewy dough...

    At home in Scotland as a boy we had "mutton" pies reheated in the oven then we covered the top with tomato ketchup before cutting into the hot spicy centre.

    We called then "mutton" pies (or just pies) but I always thought that there was very little meat therein (this was wartime and the depressing post-war 40s and 50s). I was sure it was just spicy porridge with some probably unmentionable bits of lamb but it tasted good. So does haggis and it has the same basis.

    Savory and spicy, certainly. It's a double crust meat pie, traditionally mutton, with a spiced (often highly spiced) filling. It's baked in a cylindrical tin, with the top crust being set down a bit below the sides; this forms a concave surface for mashed potatoes, beans, ketchup or whatever you feel would make it better. (Mashed potatoes and HP Sauce for me.)

    The Scotch Pie Club holds a competition for the best Scotch Pie every year.

    While no serious Scotch Pie maker will give away his or her spice combination, here's a representative recipe. Personally, I would add a fair amount more spice.

    I like Scotch pie, but not cold because of the grease texture. I like some of the similar pies with beef a little more. I'm not sure that would be a Scotch pie, though. I kind of like to put sour cream or cream cheese on the top.
    I tried to ask my inner curmudgeon before posting, but he sprayed me with the garden hose…

    and a bridie.

    And around here they call it a peh,
    as in "twa ignin pehs an' a bridie an' a can o' jinjur, ta"

    i've been having loads of bridies lately

    had a steak pie at the football last night, left half of it as it was..., not nice

    Around here, I've never heard them referred to as "Scotch pies"...I've only heard them referred to as "meat pies"...as in "meat pies and bridies".. Either way...YUM!

    We had a piping rehearsal and I made a wild boar pie.
    I was quite proud of the result.
