Ancient is available in 13 oz. and 16 oz.
Modern is available in 13 oz., 16 oz., and 18 oz.
Weathered is available in 13 oz. and 16 oz.
Muted is available in 13 oz.
Sett size will of course vary slightly from mill to mill, but roughly 9 7/8" for 13 oz. Medium, 10 1/2" for 16 oz. Heavyweight, and 11 1/4" for 18 oz. Regimental

I know you are waiting on John's reply on the mill, but I can tell you he is a great kilt maker. He has made me a few wool kilts and his work is excellent, his customer service and communication all excellent. I would recommend him for sure. With the discount a good value on top of things.
