Now a pretty basic question, but have you asked Jerry? He is a very nice guy and responds pretty quickly. Stillwater does not make their own kilts and perhaps the kiltmaker they use does not have the ability to make them. If that were the case the issue becomes moot. I'd send Jerry an email.
If you really like box kilts there are a couple of well established kiltmakers regularly on this forum. I own box pleats from both Keltoi and Skye Highland Outfitters and of course Matt Newsome makes them as well. You can't go wrong with any or them.

Box pleating is perhaps the first style of pleating that was used when kilts became a tailored garment
Kilts made with a limited ammount of yardage look better than a knife pleated kilt when it comes to the number of pleats. I'm my case knife pleating on a kilt for bigger (heavier) guys does not look that good when kiltmakers use a limited amount of fabric.
I also believe I have read that box pleating actually uses on average less fabrick than knife pleating
So to sum up the bonuses of box pleating for a kiltmaking company that is already affordable to the men on the ground
1. Historical
2. Better for big guys
3. More economical to make
