Hmmm... A term new to me is "Chicago Screws". Can you explain what those are and or show a picture of this item please?

Sure. A Chicago screw is used a lot in leather work because it is a 2 part screw that has a threaded post to screw the top into that helps stabilize the holes and makes it easier to reattach pieces as needed. It makes a secure connection that doesn't crush the fabric or leather since the post can carry the thickness of the materials.

I use an antique brass version of this that has a beveled top that looks very clean. I can try and get a close up version of mine if you would like to see it - I get them through my hardware wholesalers.
