I did wear a kilt while working on ceramic hand building, but I had a good sized apron wrapped around me, and I never tried the wheel in a kilt. I know that could work, though from what other people have worn while throwing.
Since canvas is not an option, guess I really can't say much else.

It's like anything else....I mean, you don't own just one pair of all occasional slacks. I'd imagine it's the same with kilts.
