There are a few that come to mind from the sacred to the modern and very much in between!
Sacred: Old 100th.
In between would include a lot by Burns, eg 'Hielan Laddie, Scots Wha Hae, Braw Braw Lads, Ye Jacobites By Name, to mention a few.
Modern stuff like Runrig's Hearts of Olden Glory, Pride of Summer, and Alba, in fact a lot of their earlier less commercial stuff.
Pipe/Miltary tunes like The Dark Island, Black Bear, Blue Bonnets oe'er the Border.
Even non Scottish specific, eg. Hearts of Oak, Dambusters March etc.

As far as pop music goes, anything with a lively beat would probably do. Even big band or swing music would probably get a god swish going if you're walking to it.
Most pipe bands really like 6/8 marches for a good 'swish'. (6/8 refers to the time signature of the music: 6 beats to each measure, the eighth note gets one beat).
When marching to a 6/8, the first and fourth beats are where your feet get placed: beat one is the left foot (ALWAYS start marching on your left foot!) and beat four is the right foot, so two steps per measure. If you listen to a pipe band playing this style, you'll probably hear the bass drum hitting these two beats.
Examples:
Bonnie Dundee, Cock O' the North, The Glendaruel Highlanders, Garry Owen, Leaving Port Askaig, etc.

Somebody beat me to it, but 'The Glandaruel Highlanders' is the one for me. That's one tune you can really 'swing' the pleats to .

Well --- my fave is Move It by Cliff Richard -- especially when its spinning around at 78 rpm.
But -- one that is a must is Hoots Mon by Lord Rockingham's XI -- again best served at 78 rpm -- with immortal lines like : Hoots mon. There's a moose loose aboot this hoose!
