Take the Road Less Travelled
I'm not sure if you are into walking, but it is a great way to see the country and meet folks along the way. I have done the West Highland Way twice (as a student and later with my father.) It is a 100 mile trail that starts just outside of Glasgow and ends in Ft. William. You see lochs, moors, mountains, basically some pretty amazing scenery. The trip can be done in whole or sections and there is always a town with food and accommodations within an easy day of walking. They even have services which will transport your baggage from one place to another. You just carry a day pack and go! My dad is getting a little bit older now and we are talking about taking a final walk next year. We both are into photography and the landscapes offered along the route are nothing short of spectacular!
Also, if you are looking to get a brief "isle" experience and don't want to give up the time, I might recommend going to Oban. It's a great town on the coast. You can take a day tour to Mull, Iona, and Scaffa. I did this a fews ago after finishing "the Way" and really enjoyed it. Great distillery right in town.
I'm also partial to a stop at St. Andrews having been a student there years ago. It's a nice university town which is worth a day trip from Edinburgh. You may see a lot of American golfers or tour busses at the woolen mill, but it is a neat place with castle and cathedral ruins mixed in with the university. Fun pubs and nice place to eat and shop. The beach along the Old course is where they filmed the intro running scene from Chariots of Fire years ago.
Anyway, congrats of the wedding and enjoy your trip. Scotland, the country and people are beautiful!

I appreciate your comments and suggestions. I think the one thing I'm finding is that this trip will probably not be out last trip to Scotland, as there is just so much that we all want to see and do, even in our extended trip it is not all possible.

So many places to choose from!! I'd definitely recommend a few days in Glasgow and Edinburgh. Edinburgh is the best part of Scotland by far. It has scenery and city life in one place
For scenery, the North Coast 500 is what you need. Covers all the scenic routes and there are some great little towns along the way.
Avoid aberdeen, it's not worth the journey 😁
