Having spent several decades in the canoe and kayak biz, if I told folks that we were going kayaking as part of a job interview, I would expect my potential employees to come dressed for that activity. At around 70 degrees, this would likely mean shorts, and unless going into potentially nasty conditions, I usually paddle in a polo shirt (looks better than a T-shirt) or a thin fleece long sleeve pullover in good weather. Unless they're nuts, they will provide you with a good life jacket to go over it and they're pretty warm.
Retail sales people and instructors/guides in this business dress pretty casually, though that doesn't mean old, beat up clothes, so casual but reasonably neat would probably be the best bet. If they wanted you to bring a change of clothing for paddling, I would hope they would have told you ahead of time.
