I have never had that much left over!! Being on my own, I always buy small ones (yes, I have Haggis about twice a month!). I can only offer you one suggestion and that is to beat the cold left-overs into a bowl of low-fat cream cheese so that it almost becomes a coarse paté. The result makes a gorgeous sandwich filler which I have kept (in an air-tight container) in the 'fridge for up to a week. It's a safe bet that it would do equally well as a jacket potato filling.................mmmmmm, must try that next time!
