Various, the back is the thickest we have (3mm approx), the roo skin is too light so it's been bonded to another piece of leather (2mm approx) to stiffen it a bit. The gusset is upholstery leather which is soft, flexible as required. The upholstery leather I've got heaps of in my workshop, but would buy from an upholstery supplier otherwise or possibly scraps from an upholsterer if i only needed a small amount. The heavier leather comes from a supplier called Birdsall, but I understand Tandy is your main craft leather supplier in America.
Marie my wife does leatherwork as a hobby (for as long as I've known her) and I'm a Motor Trimmer/Upholsterer by trade and I like to fidget with unusual jobs too (a challenge)
