With the harder woods it may pay not to try carving. I personally like the understated shaped hilts which display the grain to it's best advantage. If you do want to carve it, try a dremel & an engraving bit.

Ok, I do have a 130 knife collection of swiss carving knives and gouges.

Just be careful to minimise skin contact and especialy breathing of the fine dust that comes off the Ebony while its being worked.
