    I'm TDY for the rest of the week, but when I get home I can send the recipe to you or post it here.

    As for how it compares to other types, I've not had beef haggis but it did have a richer flavor than the sheep haggis. I did use a bit of beef broth to moisten it since all my hog broth was frozen. The wild hog broth is pretty rich itself though.

    We were able to get various parts from a meat market that did their own slaughter when we were Homeschooling. You just had to sign a form for some parts stating that they were for educational use rather than consumption.
