Oh, I have seen the edge of the actual fabric on hems and seam allowances pinked, I just thought it was an un raveling issue. Pinking the interfacing, which is what you are talking about, is a neat trick. The interfacing I'm thinking of is usually folded by a third along the lingth, but I get the idea that it needs to be very thin.
