Geneaology Update!
Been tracing my family history through my mother's side. Her maiden name is Scott.
My maternal grandfather: Marvin Lyle Scott
His father: Earl Reuben Scott
His father: Peter Nissan Scott (from Denmark, immigrated to US)
His father: Nis Hanson Skott (born in Denmark 1824)

So is the family Scots? I suppose it is possible for a family to move to Denmark from Scotland before emigrating here. And I am unaware of Skott developing from German/Danish families.

Well done!
I can't get past my great grandparents at the moment. I'll only ever know 7 of them at maximum - but I'm having trouble finding out who my dad's dad's mum was as she died giving birth to him.
His real father is unknown... I put his stepfather Patrick Cassidy in until I find out more info.

At least you have gotten back across the water in your first couple generations. I am about 12 generations back (to around 1700) and still have not definitively found the Foster/Forrester/Forster who came over on the boat yet, let alone from where in the old country (or the isles, I guess).
Keep looking and I bet you will find the final link likely related to some scottish military units which were used on the continent during the years when there was discord between the english and scottish kingdoms (which was a lotta years before the combining of the crowns) and for some periods thereafter as well to my understanding. (native scots please forgive any specific historical inaccuracies from a novice historian).

Don't be discouraged. Back in the day a lot of Scottish folk moved to Nordic countries.
And being from Denmark is nothing to sniff at. Most of my wife's family is from Denmark!

Scott is a common Borders name and was one of the reiving families. There could be many reasons why they left Scotland from the persecution after the Union of the Crowns when many of the border families were killed off and others would have escaped. Also there was much trade between the Port of Leith and the Low Countries, Scandinavia and the Baltic states and many Scotsmen would have settled there in business. Also many Scots fought on the Continent as mercenaries, famous examples being the Gordons who fought on both sides in the religious wars of the Holy Roman Empire and Catherine the Great's admiral who was also a Scotsman.
