Ostrich burgers are good. I've never had an ostrich egg, though.

I eat a LOT of buffalo - love it! Been eating a lot of buffalo on this trip.

Tonight its Yak...yup, the KOA in Ouray has a BBQ place next to the local Yak farm so every Wednesday night they have Yak on the menu. Can also buy it to take with you. Friends we rendezvoused with up here bought 4 pounds of ground Yak to take with them.

You can google up the details of Yak meat - supposedly sweeter, healthier even than buffalo. So - we'll see.

Will be kilted of course. Weathered Gordon today.

Like night and day...Ostrich is like a beefy red meat, and very lean.

Yes it is. I do appreciate that his heart was in the right place. It just makes me chuckle that people assume that if it's a kilt, it is by nature a Utilikilt. It's almost as if people have a hard time grasping that we might wear any other type.

Yak is really, really good. I was surprised, first time I tried it...there's a local Tibetan restaurant that gets their yak from here in CO somewhere, and it goes in a stew. I was expecting gamey and maybe a little tough...not so at all!

Travis, I didn't know you did leatherwork. Maybe we should talk over a beer on Saturday if you'll be around...I keep wanting to put some supplemental "don't burn me" leather on my shop clothes and have no idea where I should even start.

and yes... I am a fan of bison burgers...

Steven Rinella wrote an interesting book* about hunting a buffalo (Bison bison bison) in Alaska, and even using buffalo chips for fire fuel. Says the wild bison have orange fat from eating carotene rich plants rather than grain.
