A friend went hunting in CO last fall, and brought back some Elk steaks and sausage from the one he killed. My sons, who are typically picky eaters have been begging for more elk since. I am going to have to make it up there sometime and bag one myself.

There at least three local farms that raise and sell bison meat around here, I have had some really good dinners from all three.

I wonder if a "hair sporran" could be made from bison.
I tried to ask my inner curmudgeon before posting, but he sprayed me with the garden hose…

Well, I survived the "Yak Attack" but just barely. Wore my weathered Gordon with kilt hose, Z Coils, Sgian Dubh, and Ouray Fire Department t-shirt. The Yak burgers were great once you stripped off the bun and ate the meat plain. The bun and dressing disguised the flavor of the Yak.
What was an ordeal was that they were served at the Ouray KOA bar/grill and dang - EVERYONE had to make a comment about the kilt AND the Z Coils. All the standard stuff. Started with, "Do you have your knife?" Showed him. "Where are your bagpipes?" Under me kilt lassie. "What tartan is that - I've never seen that one before?" Weathered Gordon. Etc. etc. etc. ad nauseum....seems we were the only sober folks in the place...so the questions weren't sincere interest questions they were more drunk - wanna mess with me - questions. Guess you had to be there since they look pretty routine....
But we ate our Yak and went back to the motel to soak in the hot springs.
And yes - there is at least one hair on buffalo sporran. I had Miss April of Miss April's Carpetbags sew it up for me a few years ago. In fact, wearing it on this vacation trip. Been wearing it with my brown leather Utilikilt since it only has one hip pocket. Here's a poor pic of it. More pics maybe when I get home.

Been a "meat vacation" Buffalo, elk, yak....and yesterday, my lady had Rocky Mountain Oysters for lunch....no way will I even taste them...would feel like a cannibal!

We love the bison burgers from Bubba's! I'm looking forward to having one when my wife's band plays there in a couple weeks, but after reading this thread, I might have to go over there for lunch!
