OK, How about a little central PA midnight snack treat?
Scrapple and onion sandwich...scrapple, onion, little bit o mayo, mustard, hot peppers if ya got em, all on toasted wheat or oat bread, with tall cool int:
Hits the spot every time.

Scrapple (for those outside PA) is basically Haggis made with pig bits and cornmeal instead of oats (and Goetta is pig with oats).

What's scrapple?
My fave sandwich is made with fried apple slices and real melted sharp cheddar cheese on sourdough bread.

Scrapple is made with pork (usually, originally it was a German dish called panned rabbit) its the meat cooked from the bones of a pig after its been butchered with the heart, liver,kidneys and tongues added. They grind the meat first and then fry it in a little lard in a large caste iron kettle, then add a mixture of cornmeal, buckwheat flower, regular flower, oatmeal, water and salt and pepper to taste . This cooks down and will pull away cleanly from the sides of the kettle when done. Its then scooped into molding pans and left to cool. Once cool it can be sliced and fried to a golden brown or just eaten cold.
Everyone has there own recipe , some dont use cornmeal, some dont use oatmeal. Its really up to the person making it.
Scrapple is mostly a breakfast dish served with a couple of eggs, toast, homefries, and coffee. It might not sound good but believe it or not its TASTY.
Has anyone ever heard of stuffed pigs stomach?

I wouldn't dare wake my Sleeping Angel in the middle of the night to fix me anything. I haven't cooked for myself since we got married. Before that, it was Ramen Noodles 24/7.
Sometimes, when we're up late, Dirka makes me the most awesome grilled ham and cheese sandwich with bacon and tomatos. Talk about good! She uses real butter to brown the bread and good melty cheese.

Homefries? Now that's something Dirka can make. If I could only have one thing for breakfast from now on it would be her homefries, and her biscuits and gravy, and her ham and cheese omletes, and her French toast.

My sleep patterns are all screwed up lately, so it's no shock to see me frying up a steak or boiling some rice at 3 in the morning. Its probably a good thing its a half-hours walk to the nearest 7-11, or it would be chips and pop all the time!
