I was a Purchasing/Receiving Manager for Hotels and Restaurants, and I deal with food items by proper names. I have called them crawdads, crawfish, and crayfish.
My grandfather (an Iowan) always said when someone would call him a "Yankee", "Yankees live in New England. Around here, we're Iowans." 
'nuff said.
