Ok...all you fer'neers need to learn proper lingo.
NEVER say crayfish...NOBODY sez that NOBODY(well...yankees and Jeff Gordon fans maybe)
Proper words: crawfish, crawdads, or mudbugs. THATS IT...nothing else is correct.(unless you're a yankee or a jeff gordon fan).
The way you eat them..."Pinch the tail and suck the head." Pinching the tail off you can either pinch and bite the tail out, or peel the tail.
As for sucking the head...well...personally, I don't. I could go off on several tangents and jokes(see Jeff Gordon fans), however, I'll let you make your own jokes on that one.

Of course, my mother-in-law would say that anything north of Baton Rouge is "Yankee". :mrgreen:

I don't care, the "Proper" term is Crayfish, but like I said I knew them as crawdads, and you can call me a Yankee all you want, though I'm not from the "North" but the "West".
I was a Purchasing/Receiving Manager for Hotels and Restaurants, and I deal with food items by proper names. I have called them crawdads, crawfish, and crayfish.

Here we go with the yankee jokes. I love crawdads but hate nascar so you can keep your jeff gordon wise cracks, lol.

Well, I'm proud of my yankee heritage. But, yet again, I am invading the south ;)
(Just having fun folks, not really poking fun). I realize I will be out of my element; I'm sure my red sox cap will give me away as a yankee (not like the first time someone asks me a question, I'll get the old 'Are you from Boston?' question"). As far as the CRAYFISH ;) are concerned; I was told today that the head is an "acquired" taste...so, I'll stick with the tails then. I was also told to have plenty of beer on hand...somehow, I dont see that as an issue.

I spent about two years off and on breaking barges on the Mississippi but for the first six months whenever mudbugs were had I didn't suck the head. Once you do though, it just adds to the flavor (especially if the boil is done right).

As a Yankee (at the moment), I'll just stick with Maine lobster. Crawdads, although tasty, are just too much work.
