I was limiting my search to American institutions -- there are many colleges and universities in Scotland, England, and Canada that have their own tartans.
And I recently received commission to design a tartan for VA Tech.

I assume that Carnegie Mellon does as well. The hoods of their academic robes have tartan in them, instead of the usual plain satin.

Mizzou tartan...
The University of Missouri recently designed a tartan:

Oregon State University, as Matt mentioned, has a tartan. They just went through the tartan design process. You can google up articles about how they did it.
Having been in the Cap and Gown business many years Barb's reminder that Carnegie hoods are lined with the Carnegie tartan was a joy.
The only other college I know that uses a tartan for their academic hood lining is Covenant in Missouri who uses the clergy tartan. The clergy tartan they use is 1 green, 1 black, 1 green, 3 blue, 3 black, 1 green, 3 black, 1 green, 2 blue, 1 green, 3 blue, 1 green.
But what a treat for this old academic heraldry and regalia buff to combine that passion with my passion for tartans.

St. Andrew's Presbyterian College in North Carolina maintains a pipe band that wears the Earl of St. Andrews tartan:

Covenant Seminary in the metro St. Louis area is a Presbyterian seminary, btw.

As you'll see here (modeled by cesna152towser), my alma mater, Glasgow University has its own tartan.
You would probably not be surprised to learn that all the ancient Scottish Universities have a tartan but you might be surprised to learn that this is a relatively new development in Scotland. I think Glasgow only got theirs in the last ten years or so.

The Citadel (the Military College of South Carolina) has a tartan, and an active pipe band to wear it.

Edinboro University of Pennsylvania took the frugal route and use the Royal Stewart for their tartan.
